To my kids, with love

As I am discovering myself this year one of the things that have been on my heart is giving my kids some of my knowledge along the way. This morning as I make dinner in the crockpot and let the bread rise on the counter I am reminded of all I have learned since I became an adult.

Today I am going to share a pork butt (really pork shoulder) recipe that I am making.

Ingredients:

  • 3 lb pork
  • Dry rub ingredients
    • 2 tbsp ground coffee
    • 1 tbsp paprika
    • 1 tsp ground ginger
    • 1 tsp ground mustard
    • 1 tsp ground coriander
    • 1 tbsp brown sugar
    • 1 tbsp salt
  • Braising liquid
    • 1 cup apple cider (we used homemade- spices simmered in apple juice)

Mix dry rub ingredients together pat onto pork and let sit overnight in a covered dish. Add apple cider to crockpot and place pork on top. Cook on low for 8-10 hours. Shred with a fork.

Dinner turned out pretty good. I for sure would have added smoked pepper or something to give it a little kick, but it has a pretty good flavor overall.
